Our hygiene and quality control measures include :
- Routine cleaning and sanitization of all equipment, food contact surfaces, walls, and floors.
- Controlled access to processing areas with foot baths, handwashing stations, hand sanitizers, and strict entry protocols.
- Mandatory personal hygiene standards: all staff wear clean uniforms, gloves, masks, and hairnets. Jewelry is prohibited, and regular health checks are conducted.
- A comprehensive pest control system to prevent any risk of contamination from insects or rodents.
We also maintain full traceability across our supply chain, ensuring every product is tracked from catch to customer, guaranteeing quality and accountability at every step.
Quality Control Processes
Raw Material Inspection
- Routine cleaning and sanitization of all equipment, food contact surfaces, walls, and floors.
- Sensory evaluations are performed, assessing appearance, odor, and texture.
- Species like tuna undergo histamine testing in our in-house laboratory.
- All seafood is inspected for parasites to ensure safety and quality.
In-Process Controls
- Routine cleaning and sanitization of all equipment, food contact surfaces, walls, and floors.
- Key parameters monitored during processing include portion weight accuracy and visual defects such as bones, bloodlines, or discoloration, ensuring every product meets strict quality and appearance standards.
- Microbiological sampling is conducted at critical control points, with swab or product testing for pathogens like E. coli, Listeria, and Salmonella.
Final Product Control
- Each packaged product is carefully checked for seal integrity, correct labeling, and proper storage conditions to ensure safety, compliance, and optimal freshness throughout the supply chain.
- Random samples are tested by external laboratories for microbiological and chemical analysis.
- Temperature control is strictly maintained, with fresh products stored between 0°C and 4°C to preserve peak freshness.
Traceability
Each product is assigned a unique lot number, which is linked to comprehensive records, including:
- Source information (fishing vessel, landing site)
- Date and time of receipt
- Processing and packaging history
- Storage and shipping details
Traceability is managed through both manual logs and digital systems, using barcodes or QR codes. This system allows for rapid identification and removal of specific batches in the unlikely event of a food safety concern — ensuring quick response and continued customer trust.
